Canna Eclairs and Cream Puffs – Tutorial

Learn how to make Pate A Choux, whip cream with berry coulis, and chocolate ganache. You can make this regular or infused with cannabis.!

Pate A Choux Ingredients:

1 cup all-purpose flour
1/4 cup canna flour
1/2 cup butter (1/4 cup can be cannabutter) cold and cut up
5 eggs, 4 for the recipe, 1 for egg wash
1/2 cup water
1/2 cup milk (2% or whole milk)
1/2 tsp salt
1 tsp sugar (optional)

Coulis Ingredients:

1 cup frozen fruit (your favorite)
1/2 cup sugar (1/4 canna sugar, 1/4 granulated sugar)
1 tbls lemon juice

Whip Cream Ingredients:

1 cup whip cream
2 tbls sugar (canna, honey, agave, or maple syrup can be used)
1/2 tsp vanilla

Ganache Ingredients:

200 grams dark or milk chocolate
1/2 cup heavy cream
1 tbls spoon butter (canna butter can be used)
1 tbls corn syrup ( canna syrup can be used)
